The oil that we produce comes only from olives harvested in our company.
The oil is a blend resulting from the type cultivars Leccino, Frantoio, Ascolana, Pendolino and Sargano.
Harvesting takes place directly from the plant during the ripening of the fruit, ie at the moment of the change of color of the olive in manual form or with the help of combs mechanically driven but without the use of abscission products.
After harvest are processed into oil within 48 hours to ensure the olive maintaining the degree of initial acidity and, to our oil all the flavor of freshly picked fruit.
As they did in ancient times, our olives are subjected to cold pressing with millstones. The oil is stored in stainless steel containers perfectly clean without the use of chemical detergents, kept in a cool location away from light and heat sources. Depending on your taste can be eaten right away, for those who, connoisseurs, like the raw taste, or for the most delicate palates can be left to settle naturally letting it rest for a month.
